Fifty Vara: A New Dining Experience in San Francisco’s Sunset District
Fifty Vara is set to debut on Monday, March 31, in the former Sunset Reservoir space located on Noriega Street. This new restaurant aims to attract a diverse clientele—from locals to enthusiasts of craft beer—by focusing on grilled burgers and a selection of Czech Republic-inspired brews.
Community Roots and Vision
Owner Brian Reccow, a long-time resident of the Sunset neighborhood, expressed his commitment to the locale. With a history of revitalizing local establishments, including Magnolia Brewing, Reccow saw an opportunity when the spacious venue became available. “We’re bullish on San Francisco,” said Reccow, emphasizing the importance of this spot that has served the community since the 1940s.
A Taste of Tradition and Innovation
The menu at Fifty Vara is designed to blend high-end seasonal ingredients with a nostalgic San Francisco flair. Diners can expect a variety of dishes inspired by Spanish cuisine, including appetizers like boquerones, pan-roasted sea bass accompanied by snap peas, and Dungeness crab fritters. The restaurant is promoting its bistro-style burgers, featuring substantial patties paired with pickled red onions.
Chef Adriana Fleming, known for her previous work at the now-closed vegan restaurant Baia, has crafted the menu alongside Trish Tracey from Myriad Hospitality.
Brewing and Beverage Options
In response to challenges faced by the brewing industry, Reccow aims to appeal to both craft beer aficionados and casual drinkers. Fifty Vara will brew its own beer under the brand “KINDS,” leveraging a special tap system designed to enhance flavor and carbonation. The house lager will be priced at an accessible $6.
Notably, the restaurant will feature Jonathan Taylor, a Pro Brewer, to oversee beer production, while Erin Rea, an experienced bartender from the West Coast, has developed a creative cocktail menu. Highlights include the Sunset Delight, a tropical mix of white rum, pineapple, mango, and lime, as well as a non-alcoholic option, the Pacific Crest, which combines hemp, ginger, and soda.
A Thoughtfully Designed Space
Fifty Vara boasts an inviting ambiance, enriched by natural light, a variety of plants dubbed the “tree of life” by Reccow, and soothing sound design. The interiors were created in collaboration with Jim Maxwell of Architects II, while Cindy Bonilla of Sunset Roots contributed to the lush greenery.
The restaurant layout includes multiple areas: two mezzanines, a ground-floor dining area, and a proper bar, catering to various dining experiences throughout the day.

Reccow hopes Fifty Vara will serve as a gathering place for both joyful celebrations and supportive moments for the community. The restaurant’s flexible structure is intended to evolve, accommodating lunch and brunch services in the future, thereby offering a dynamic setting reminiscent of a family establishment, café, and beer hall all in one.
